California Culinary Arts School is one of the best culinary schools in the world. Many of its graduates are now working in prestigious places. Even Obama's, Michael Jackson, and Oprah's top chefs are the graduates of California Culinary Arts School.
A few months ago they held culinary competition among the California Culinary Schools' students and they came up with few winners with their spectacular culinary art school's recipes. For all of you who are curious what the winners made in this culinary competition, below is one of the top winners' culinary style:
Steamed Brown Bread
Ingredients:
1½ cups fine cornmeal
2 cups whole-wheat flour
1 cup all-purpose flour
Pinch salt
1/3 cup molasses mixed with 1 tsp bicarbonate of soda
1½ cups cold water
Butter or oil
Boiling water
California Culinary Arts School Method:
1. Sift the dry ingredients into a large bowl and return the bran to the bowl. Mix the molasses, bicarbonate of soda and water together. Make a well in the center of the flour and pour in the mixture. Mix just until well blended.
2. Use a large can from canned tomatoes, coffee or canned fruit. Alternatively, use about 6 smaller cans. Wash them well and remove the labels. Grease generously with oil or butter. Spoon the bread mixture to come about two thirds of the way up the sides of the cans.
3. Cover the tops of the cans tightly with buttered or oiled foil. Place them on a rack in a deep saucepan. Pour enough boiling water around the cans to come about halfway up the sides. Allow water to bubble gently to steam the bread for 3-4 hours in the covered pan. Add more boiling water as necessary during cooking.
4. The bread is ready when a skewer inserted into the center of the bread comes out clean.
